• The Aztecs valued the plant for its medicinal properties and the ritual usage.

• Amaranthus served as one of the essential foodstuffs of the Incas’ nowadays it is called ‘ kiwicha’ in the Andes.

• Today the mixture of plant’s grains and honey or molasses is very popular for its popcorn-like taste. It bears the name ‘alegra’, which is ‘joy’ in Mexican Spanish.

• The Amaranthus was frequently mixed with blood and utilized in many pagan ceremonies.

• The leaves of all the plant’s species can be consumed. Having the taste of spinach, they are rich in nutrients. The amaranthus’ young shoots can be also eaten. Both foliage and shoots are consumed as vegetable.
